The wine-making process involves pressing the grapes and then pouring the juice, grape skins, stalks and pips into the Qvevri, which is sealed and buried in the ground so that the wine can ferment for five to six months before being drunk. Glekhuri (gle-khoo-ree) is a small production line of qvevri wines produced at Teliani Valley, by the rising star winemaker Temuri Dakishvili. This white or "Amber" wine is made from 100% Kisi grapes. The wine is fermented and aged in qvevri, large clay jars that are buried underground, and made with minimal intervention.
